First lets make the cooked apple, you will need:
- 1 medium apple diced (your choice if you peel it or not)
- 1 tsp ground cinnamon
- 1 packet sweetener of choice
- 1 tsp corn starch
- 2 tbsp of water
While your apple is cooking we can start the oatmeal base, what you will need:
- 1/2 cup of quick oats
- 1/2 cup water
- 1 ripe banana, mashed
- 1/2 teaspoon chia seeds
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- half of the Cooked Apples (set the other half aside to top your baked oatmeal with)
Preheat your oven to 380F.
Place the quick oats, water, mashed banana and ground cinnamon into a bowl and mix well. Add in half of your cooked apple once it is done and mix together with the oatmeal mixture. Spray your baking dish with cooking spray of choice and pour the mixture in.
Bake for 30 - 35 minutes. Check at the 20 minute mark and give the Centre a touch, if it feels firm it’s done, if it’s not firm just put it in for another 10 minutes.
Once your oatmeal is done, take it out of the oven and top with the remaining cooked apple. This makes 1 serving at 4 SmartPoints.
**This recipe can also be made into muffins by placing the mixture into a muffin tin. You should be able to get 3 muffins out of this recipe
